Like many Apple Intelligence features, there is an off switch for Notification Summaries. Go to Settings > Notifications > Summarize Previews, and from the top, disable the Summarize Previews feature.

Another feature you may want to turn off is the already controversial notification summaries. On an iPhone or iPad, go to Settings > Notifications and turn off Summarize Previews.

Click the Summarize Notifications tab, then turn Summarize Notifications off. Similar to the iPhone/iPad settings options, you can turn off notification summaries for select apps.
