Set aside to cool slightly. By hand, beat the sweet potatoes and the oil together. Beat in the sugar. Add the eggs, 1 at a time, beating well after each. Add the vanilla, and stir to combine.

Add your favorite seasonings. Bake for 30 minutes at 325ºF. Enjoy! Medium-starch potatoes, like Yukon Gold, Yellow Finn or Yellow Rose potatoes are recommended for potato tornadoes.
